How long for google to de-index old pages on my site?

I launched my redesigned website 4 days ago. I submitted a new site map, as well as submitted it to index in search console (google webmasters).
I see that when I google my site, My new open graph settings are coming up correct.
Still, a lot of my old site pages are definitely still indexed within google. How long will it take for google to drop off or "de-index" my old pages?
Due to the way I restructured my website, a lot of the items are no longer available on my site. This is on purpose. I'm a graphic designer, and with the new change, I removed many old portfolio items, as well as any references to web design since I will no longer offering that service.

Have you tried deleting these old pages from the index at Google Webmaster Tools?
https://www.google.com/webmasters/tools/url-removal
You can only delete them temporarily but it might overlap the process of actually deleting the pages that you have already set in motion by uploading a new site map.
I did that about a week ago and the effect was noticeable within a couple of days.

Hi Martijn. Thanks for your response. My primary concern are the links that appear below my main link in the SERP. See screenshot. Half out those are no longer working. Sure, they redirect to a 301, but its still messy.

Hi Mark. Thanks for your response. All links as far as I can tell now have 301s. I'm sure there might be the odd page out that I forgot, but I'll be monitoring search console for errors.
Your suggestion about the specific page to redirect web design traffic is a good one. I'll think about it.

Yes this really depends on how frequently Google crawls your site. Do these pages now lead to a 404 error? If yes I would suggest 301 redirecting them to other pages on your site. You also mentioned that you don’t offer the web design service anymore. If you still gets some traffic there you could make a specific page. Here you can state that you don’t offer web design but maybe some other relevant services.

This can take a very long time sometimes, for bigger sites I could see this take months with smaller sites it depends on the frequency and the crawl rate that Google visits your site. If Google is not very active on your site because the content doesn't really relate to something that is updated often then Google might decide not to come back too often to save their own servers and find other content elsewhere on the web.
In your case I would focus on making sure that the new site and structure are working flawless and less about de-indexing the old pages. I can't imagine that they still receive a ton of traffic. Without any doubt is 4 days still very early for Google to pick up the changes.

Canonical when using others sites
Hi all, I was wondering if this is a good way to safely have content on our website. We have a job search website, and we pull content from other sites. We literally copy the full content text from it's original source, and paste it on our own site on an individual job page. On every individual job page we put a canonical link to the original source (which is not my own website). On each job page, when someone wants to apply, they are redirected to the original job source. As far as I know this should be safe. But since it's not our website we are canonical linking to, will this be a problem? To compare it was indeed.com does, they take 1 or 2 senteces from the original source and put it as an excerpt on their job category page (ie "accountant in new york" category page). When you click the excerpt/title you are redirected to the original source. As you might know, indeed.com has very good rankings, with almost no original content whatsoever. The only thing that is unique is the URL of the indeed.com category where it's on (indeed.com/accountant-new-york), and sometimes the job title. Excerpt is always duplicate from other sites. Why does this work so well? Will this be a better strategy for us to rank well?

Best practice for cleaning up multiple Google Places listings and multiple Google accounts when logins were lost.
We are an inbound marketing agency, most of our clients are not relying on local seo. I have a pretty good understanding of it when starting fresh but not so much in joining a "movie in progress" kind of scenario. Recently we've brought on two clients who have had their websites in place for awhile, have made small attempts at marketing themselves online over the years and its resulted in multiple Google places listings, variations of the company names (one of them changed their name), worried there are yet more accounts out there they aren't aware of, etc (analytics, and others from well intentioned employees and past service providers - no internal leadership at the company level). In reading Google help forums I'm seeing some recently having their accounts suspended when they try to clean things up - in one case a person setup a new Google account thinking he would start fresh and in trying to claim listings, get rid of duplicates, etc. his account was suspended. What is the CURRENT recommended course of action in situations like these? With all the changes going on with Google, I don't know which route to take and have combed the Internet reading articles about this (including Google's resources) - would like some current real world advise.

Regarding site url structure
OK so there are already some answers to questions similar to this but mine might be a little more specific. OK website is www.bestlifeint.com Most of our product pages are as such: http://www.bestlifeint.com/products-soy.html for instance. However I was trying to help the SEO for certain pages (namely two) with the URL's and had some success with another page our Soy Meal Replacement I changed the site URL of this page from www.bestlifeint.com/products-meal to www.bestlifeint.com/Soy-Amazing-Meal-Replacement-with-Omega-3s.html (notice I dropped the /product part of url and made it more seo friendly. The old page for this page was something like www.bestlifeint.com/products-meal The issue is that recently this new page and another page I have changed http://www.bestlifeint.com/Whey-Milk-Alternative.html I have dropped the "/product" on the URL even though they are both products. The new Meal Replacement page used to be ranked like 6th on google at the begining of the month and now is like 48th or something. The new "whey milk" page (http://www.bestlifeint.com/Whey-Milk-Alternative.html) is ranked like 45th or something for "Whey Milk" when the old page...."products/wheyrice.html" was ranked around 18th or so at the begining of the month. Have I hurt these two pages by not following www.bestlifeint.com/product.... site structure? And focusing more on the URL SEO? I have both NEW pages receiving all link juice inside web site so they are the new pages (can not go to old page) and recently seeing that google has pretty much dropped the old pages in search rankings I have deleted these two pages. Do i just need to just wait and see? According to my research we should rank much higher for "Whey Milk" we should be on the first page according to googles own statements of searchers finding good relevant material. The Google/Yahoo Connection
I have been telling myself and clients for a while that you do not need to specially SEO things for different search engines. While I stand by this (staunchly) I can't help but notice how SLOW yahoo is to pick up my SEO updates and rank them as compared to google. Sometimes I see Rank increases within a day or two (or sooner) But Yahoo is still well behind in their caching and calculations.

Why is a link considered active, but is no longer on the page?
How come links sometimes show up in OSE or Yahoo Site Explorer and then when you go to the page, they're not there anymore? Why is a link indexed or considered active but is no longer on the page?
