SEO-impact of mouseover text on header pictures

Hi,
what do you reckon of taking away the mouseover effect on the header pictures seen on www.viventura.de/reisen/peru?
We are thinking of eliminating the mouseover text to make User Experience even better but are worrying that our ranking might go down when doing so. Any experiences, any help is highly appreciated!

I'm not a Spanish speaker but I will assume that the text that shows up in the mouseover is highly relevant, informative, and well-written. If so, eliminating that mouseover is likely to have an impact unless you use the text somewhere else on the page (like underneath the header). Currently, the text that shows up in the mouseover is indexed as part of the page content--and it's probably a fairly important part.
You could go into one of your lesser important category pages where such flyover text occurs and remove it from the html and test whether there is any change to traffic or rankings (or conversions) before doing it for the entire site.

We are a non-profit and the external site allows users to create peer-to peer fundraisers that benefit our ministry. Coming soon SEO
Hi, I was wondering what is the best practice to redirect all the links juice by redirecting all the pages of your website to a coming soon page. The coming soon page will point to the domain.com, not to a subfolder. Should I move the entire website to a subfolder and redirect this folder to the coming soon page? Thanks

Target: blank. Does it make an SEO difference?
I've notice many sites MOZ included no longer use the target: blank attribute. I think that's what it's called. Basically when a link on your site opens a new tab in the browser as opposed to replacing the browser window you are in. Given that MOZ think of everything, I would love to hear opinions on this.

Does the use of sliders for text-on-page, effects SEO in any way?
The concept of using text sliders in an e-commerce site as a solution to placing SEO text above or in between product and high on ages, seems too good to be true.... or is it? How would a text slider for FAQ or other on-page text done with sliding paragraphs (similar but not this specific code- http://demo.tutorialzine.com/2010/08/dynamic-faq-jquery-yql-google-docs/faq.html) might effect text-on-page SEO. Is it bad (black hat) to have an H1 text as a text indent?
Is it bad practice to use a text indent through CSS for H1 text on a homepage(basically hiding h1 text)? I'm just trying to compensate for the fact that some text that should really be in the h1 tag is actually an image.

Header Tags
Ok so I am writing different pages and the first heading is an H3 just because I wanted to it be a certain size. Then as you see the content, I have an H1 tag. Example page: http://www.oxfordmshomes.net/condos/acadia-court-Oxford-MS you can see that "Acadia First" is the first thing you see on the page and it uses an H3 element. Long story short, my hierarchy is wrong. Does this have any negative effect on my SEO efforts?

Restaurant menu SEO: PDF or HTML?
Is it better to use a PDF or hard code restaurant menus (or any document for that matter) in HTML? I want the content to be indexed and thought PDF was the way to go for several reasons, but I wanted to get confirmation on this before I move forward.
