I would start out by making sure you put back the analytics tracking code, since that's not there right now (checked both with Google Tag Assistant & in the source code). So it makes sense you can't see any traffic from search, since there is no tracking. That probably explains a lot of it.

As Andy mentioned, Ahrefs is a very good tool to use here. I don't know if you can do it in OSE, but in Ahrefs you can see lost domains and the last date that it was seen in their index.
I looked at your screenshots and I don't know if this is a coincidence - but if it's not the links, then it might be the Phantom 3 update, that there was a lot of chatter about (e.g. http://searchengineland.com/evidence-of-an-unconfirmed-google-update-happening-on-november-19th-237452). The fall in the curve does seem to match the date of this update - but again it's hard to know without looking at it any further. But it might be a plausible explanation as well.

As Alick said, Google can sometimes choose to generate a different title or description if they feel it would fit better with the content. In this case it would probably help if you shortened your title, as it seems to be too long and will cut it off somewhere in the word "shipping" as it is right now.
I would also look into adding a meta description, since it's empty and just pulls random stuff from your website.

It doesn't sound like a penalty problem at all, otherwise you'd see more of your pages impacted.
You're saying you've done internal links to them - but only mention footer links. Have you also put internal links in your texts, pointing to these pages) I honestly don't put much value on footerlinks, as they're not part of the main content on a page. From my experience these don't really add much compared to links in the main content (the category/product descriptions or whatever text you have on there).
I would focus on a few of the deeper pages and give them some internal links from your stronger pages to see if you can boost their authority.

You are too focused on your product - and not enough on your target audience. They are not from Norway - therefore the .no is wasted.

If you're going to be doing this yourself, I'd read up on all the links posted by Andy and preferably find more on how to change domain names. If you don't do it properly your clients site can take a huge hit in visibility. You don't want that - trust me.
What I'd do is make a spreadsheet of every single URL on the old site and what that URL will be called on the new site. If you keep the site & URL structure the same, this should be fairly straightforward. But once you have your list, you should add them to your .htaccess to make sure you do a one-to-one redirect. That way the individual URLs should keep most of their juice and you minimize the losses.
But just be sure you know exactly what you're doing - otherwise it can hurt a lot more than it should.

Google do not use it in a page's ranking (see here: https://www.youtube.com/watch?v=CgBw9tbAQhU). And since the referral spam is never actually on your site, but only activating your tracking code it shouldn't hurt you.
Besides, I don't think I've seen a site out there who hasn't been hit by referral spam. Some haven't been hit as hard, but still have seen it to some degree. Just set up some filters & segments so you can analyse on the real data. I found it very helpful to read this and this.

It sounds like a negative SEO attack from someone else. If the links are already hurting your position, I don't know, but I'd hurry and get a disavow file sent in to Google.
I know the guidelines say to contact sites to get them to remove the links, but with these spam links that's just not gonna happen. So just go through your linkprofile (preferably using several tools) and disavow those domains that are irrelevant.

I think the answer is in the last part you said - making it useful for the reader.
If you make a legitimately useful piece of content, then I would always say go for it.
A good example is a brand with multiple stores, where it absolutely makes sense to create a unique page about each location. This page would include information about the store, parking, directions to the store, selection of products, employees, some information about the town, etc.
If you're making the page just because you want to rank for "keyword + town" on the other hand, then I would probably think twice, before doing it. You would simply be creating thin content, which could potentially piss off both the panda and give your users a bad experience on your site.

I would just like to add to the above responses, that you should be careful copying a competitors' backlink profile. These directory links could be something of the past that they put in several years ago when it worked. They could very well since have been disavowed; there's no way to know that.
There might still be some value to get from directories, but I wouldn't just get in one because my competitors are there. If they are human edited and are niche relevant (dmoz.org being the exception) then go for it. If not, then I would take a long hard look at whether or not it is worth it to go there.

RE: How much time wait to do Link Building to a new page?
If you feel your new website is ready for people to visit it, why would you not start promoting it? That's basically what link building is these day, promotion.
As long as you get your links in a natural way and keep your link profile healthy, then there's really no limit to how many or how fast you can get them. If your content is awesome enough to get a bunch of links fast - then you deserve to get them (and the high rankings that comes with it).

If nothing major has been changed on the site, then I'd say it's plausible, that it's due to these changes.
I've especially seen dips on those keywords where the local pack shows up - so if your site is ranking on a lot of those, I'm afraid you're in for a rough ride. So if a majority of your clicks used to come from these searches, I'd probably start finding ways to boost your medium/long tail rankings on those terms - then you might avoid the local pack.

Images are content too. So I would absolutely say no, it will not be categorized as thin content and don't worry about a penalty.
If the page adds value to the users, then you should be fine. If you want a chance to have the page rank in the SERPs, then I would however consider adding some kind of intro + a few paragraphs about each picture. Then Google can put the pictures in context and will at least have a chance to know what the page is about.

I can only agree with what Logan said here.
I would say, that not all directories are a waste though. If you happen to find a directory with good authority, is still being maintained and is relevant to your niche or location, then I would say go for it. Just always think whether it's worth it or not to go for it. If you're in doubt, then that's probably a sign you shouldn't waste time on it.
