Using # is referring internal sections of a within a page and NOT an url or a HTML / PHP file.
Since crawlers index only URLs these kind of menu's wont get indexed.
Google is capable of handling these property as site-links ( showing the most clicked # tags ) of the page.

Its not a good practice to redirect old -> new -> newer urls. It is referred as sneaky redirects and it will lower the SERPs.
Good option will
a. old -> newer
b. new -> newer
Decide any of the two options from above depending the number of backlinks to old and new urls.
Also put a custom 404 error pages to handle the 404 errors occured from other urls.
Text ads gives more CTR ( Click Through Rate ) than Image Ads.
Links units works brilliant if placed on proper place.
The above is not same for all websites. Based on the type of the websites the ad performance may change.
You have to test it for every ad types colors, placement etc to find which works better.
If those less significant pages arent entry pages for organic or referral traffic you can remove it. Else its not a good idea to remove those pages just to reduce the number of indexed pages.
If those pages are removed, make sure you add a custom 404 page to handle the 404 errors
Using clean urls will make your website rank higher in SERPs.
Using 301 redirects for all old urls to respective new urls is a good idea.
I had the some loss of traffic when switched to a cTLD than gTLD. If using cTLD of .nl your website will rank better in google.co.nl but rank lower in Google.com.
Based on the location of the visitors you need, you can switch the TLD.

301'ing old urls to new urls is enough. Additionally you can add a custom 404 page for the other old urls which may be created becuase of tags, categories etc.
You can block the urls which has term "/product/search/" in them. It can be easily done by adding the following to the robots.txt
User-agent: *
Disallow: /product/search/

Finding urls to keep is simple. Just login to your Google Analytics and Check the tab "Content". You will find all the urls and their pageviews. Sort down the necessary urls.
Recommended: It is recommended to add 301 redirects from all the old urls to new urls. Also add a custom 404 page after the launch.
Login to webmaster tools to find more errors.
