Restaurant menu SEO: PDF or HTML?

Is it better to use a PDF or hard code restaurant menus (or any document for that matter) in HTML? I want the content to be indexed and thought PDF was the way to go for several reasons, but I wanted to get confirmation on this before I move forward.

For SEO I would recommend HTML, with the option to download a PDF. That being said you should also consider how much time is wasted on doing it HTML. Can the company earn more money by spending their time on something else? I mean how often do people actually search for a certain dish when they are about to go out for dinner. My bet is that they are more likely to do a search like: "Italian restaurant in downtown Berlin" rather then "Broccoli slightly roasted in white-wine". Do you see what I mean?

SEO - New URL structure
Hi, Currently we have the following url structure for all pages, regardless of the hierarchy: domain.co.uk/page, such as domain/blog name. Can you, please confirm the following: 1. What is the benefit of organising the pages as a hierarchy, i.e. domain/features/feature-name or domain/industries/industry-name or domain/blog/blog name etc. 2. JavaScript page loader - SEO impact

I am working on a site that has a bizarre page load system. All pages get loaded trough the same Javascript snippet, for example: Changing the values in the form changes the page that is loaded. The most incredible thing is that, against my expectations, pages do get indexed by Google.
My question is: "Does loading pages dynamically using JavaScript affect the overall SEO performance?" Why are pages getting indexed? Thank you for shedding light on this.

Error report in Bing Evaluated size of HTML....
Hi Whilst checking Bing's SEO analyser I got this error message for our page www.tidy-books.co.uk/childrens-bookcases "Evaluated size of HTML is estimated to be over 125 KB and risks not being fully cached. (Issue marker for this rule is not visible in the current view)" Just wondering what needs to be done about it and what it actually means? Thanks

International Seo - Canada
Our organization is currently only operating in the USA but will soon be entering the Canadian market. We did a lot of research and decided that for our needs it would be best to use a subfolder for Canada. Initially we will be targeting the english speaking community but eventually we will want to expand to the french speaking Canadians as well. 200 Redirects for SEO instead of 301
We are working with a company on re-platforming our website. On a call yesterday they outlined a strategy to use 200 redirects for our top keywords instead of 301s. I am not familiar with this type of redirect and was wondering if anyone could provide some more insight.
