Most definitely do a 301 redirect because it will keep most of your link juice and it will let the search engine know that the page/site has moved. As long as the page is redirected to a relevant logical page you will be fine... no matter how many 301s you do. However if the page does not make sense to redirect do not redirect instead you can display a 404 page (splash page) etc...

From the user end they will be redirected to the new page. If the origin of the redirect is the old domain (site B) try to change it, or edit it so it has the new location/anchor.

I would look at a few sources.

Yext.com has free power listings where you can find inconsistancies and new directories to submit your site to.

Getlisted.org has some listings

whitespark has a free and paid tool to help you find some. (They also offer an plan for local citations $5 each)

SEOmoz also has a chart of directories: http://www.seomoz.org/directories

Keep in mind to only submit to relevant categories.

I was always under the impression that directory submissions don't all get accepted in one shot. Each submission gets accepted at a separate time, correct? Some may take days other may take month.

If the page has incoming links from external sites I would 301 the page and keep the link juice (If it is similar content). However, if the page has no incoming links other then internal I would delete the page and I would also 404 the page in the robot.txt file. By doing this you actually spread more link juice on your existing pages.

Link Juice in most cases spreads from the home page because people naturally link to it. The more pages you build on the site the more you spread that juice. However, many pages may have been deep linked to by users on your site giving those pages there own value, to avoid losing this value you can 301 the page.
