Question about best approach to site structure

I am curious if anyone can share some advice. I am working on planning architecture for a tour company. The key piece of the content strategy will be providing details on each of the tour destinations, with associated profiles for each city within those destinations. Lots of content, which should be great for the SEO strategy.
With regards to the architecture, I have a ‘destinations’ section on the Website where users can access each of the key destinations served by the tour company. My question is – from a planning perspective I can organize my folder structure in a few different ways.

I am curious if anyone has an opinion on what might perform best in terms of the site structure from an SEO perspective. My fear is taking all of this rich content and placing it so many tiers down in the architecture of the site. Any advice that could be offered would be appreciated. Thanks.

Chris makes a good point re the leaders in ranking and what are they doing. I would also look for chinks in armor. But, first I would stop what you are doing and back up: Do you have a sales funnel? Do you have a serious KWA? Do you have a sitemap predicated on KWA and UI/UX (Factoring in user habits? Likely user habits if the company is new?). To me url structure comes to a degree as a result of these items.
Once you have those, typically on a site of any size (we have particular expertise in the tourist industries on our dev team) you will have certain issues that you will need to make decisions on based on the clients needs, ui/ux, best seo that really are business decisions and you will likely get right - if you take it in order IMO. But that said, the structure I follow is based on some basic SEO rules - four clicks max, four clicks max, keep it simple for the bot (they all can't be Roger), then: What are the important business KWs I must rank for (destination first or event first or mode first, etc.) I would follow that down the line. Personally, I have never searched on Tour company (ies) nor have I searched on "destinations" or "Sights" so I would not have that in my architecture unless the KWA showed I should. So, instead of destinations for example what are they looking for specifically and can I get that in a menu/ sub-directory etc. Then follow your brain.
Sorry that I cannot give you a do it like this: A/B/C but from the fact you are looking I think you will get this and make it happen. My opinion is that after domain what is the first thing they are looking for that is a category then what specifically within that and then other data for a decision. To me you tell the search engine that you are at my domain...this is the most important keyword here, this is next, and this is the final destination that is rock solid.

You may take a look at how the other guys are doing it--the ones that are ranking at the top of the search results. Also, be sure to allow options for other means of finding the content (on your site and via search) e.g. destinations with similar histories, architecture, food, gifts, days of the week, nearby things to do, kid friendly, distance from specific landmarks, etc. Doing those things are what's going to set you apart from competitors in the search results.

Site structure for location + services pages
We are in the process of restructuring our site and are trying to figure out Google's preference for location pages and services. Let's say we are an auto repair company with lots of locations and each one of them offer some unique services, while other services are offered by all or most other locations. Should we have a global page for each service live with a link to the location page for each shop that offers that service? OR Should we built a unique page about each service for every location as a subfolder of each location (essentially creating a LOT of sub pages because each location has 15-20 services. Which will rank better?

Site map creator
I have a large website with about 1300 pages. I can't find a good sitemap creator that will crawl the whole site and spit out the xml file. Any ideas or suggestions for good services? Also, a site this large, should I consider mutiple site maps?

Structured Data Questions
I am showing 2 items with errors. These products have both been removed from the site, and will trigger a 404 Page Not Found. I am still seeing the page URLs in Webmaster Central > Search Appearance > Structured Data. They are shown as items with errors, the errors being that they are missing price too. Should I 301 redirect these on an htaccess file, or should I remove the page url in some other way from Google? Also, I have a site with over 50,000 products and 2,000 category level pages. In Structured Data, there are only 2,848 items. Does it seem like Google is collecting very little data compared to how many urls I have on my site?

Google+ Page Question
Just started some work for a new client, I created a Google+ page and a connected YouTube page, then proceeded to claim a listing for them on google places for business which automatically created another Google+ page for the business listing. What do I do in this situation? Do I delete the YouTube page and Google+ page that I originally made and then recreate them using the Google+ page that was automatically created or do I just keep both pages going? If the latter is the case, do I use the same information to populate both pages and post the same content to both pages? That doesn't seem like it would be efficient or the right way to go about handling this but I could be wrong.

Best way to duplicate a wordpress site for staging purposes?
I want to make some changes to my Wordpress site, and want to somehow set up a live staging area. Does anyone know of a good way to do this? I want all of the same content there I just want to be able to make changes to it and try it all out before going live. Any thoughts on this? Also I want to be sure the staging site doesn't get indexed since it will be a complete duplicate of my existing site. Thanks!

Best practice for site maps?
Is it necessary or good practice to list "static" site routes in the sitemap? I.e. /about, /faq, etc? Some large sites (e.g. Vimeo) only list the 'dynamic' URLs (in their case the actual videos). If there are urls NOT listed in a sitemap, will these continue to be indexed? What is the good practice for a sitemap index? When submitting a sitemap to e.g. Webmaster tools, can you just submit the index file (which links to secondary sitemaps)? Does it matter which order the individual sitemaps are listed in the index?

Best Practices for Pagination on E-commerce Site
One of my e-commerce clients has a script enabled on their category pages that allows more products to automatically be displayed as you scroll down. They use this instead of page 1, 2, and a view all. I'm trying to decide if I want to insist that they change back to the traditional method of multiple pages with a view all button, and then implement rel="next", rel="prev", etc. I think the current auto method is disorienting for the user, but I can't figure out if it's the same for the spiders. Does anyone have any experience with this, or thoughts? Thanks!

My site links have gone from a mega site links to several small links under my SERP results in Google. Any ideas why?
A site I have currently had the mega site links on the SERP results. Recently they have updated the mega links to the smaller 4 inline links under my SERP result. Any idea what happened or how do I correct this?
