No Sub-Categories in XML Sitemap

I have a couple of sites using 3dcart, the ecommerce platform. Their tech support recently told me that they do not list sub-categories in the XML sitemap, only products and top-tier categories.
Am I the only one that sees a problem with this?

The simple solution is to use a sitemap generator. There are many solutions of them. Just google it and find which one works best for you.
Personally, I don't care for companies I use to tell me "no". I would take that as an indicator I need to look for another ecommerce platform.
With the above noted, a sitemap is really not necessary for a well-designed site. Yes, I use one and submit it mainly because I use an easily automated process. As long as your content is well-linked, then Google will see all of it.

.xml sitemap showing in SERP
Our sitemap is showing in Google's SERP. While it's only for very specific queries that don't seem to have much value (it's a healthcare website and when a doctor who isn't with us is search with the brand name so 'John Smith Brand,' it shows if there's a first or last name that matches the query), is there a way to not make the sitemap indexed so it's not showing in the SERP. I've seen the "x-robots-tag: noindex" as a possible option, but before taking any action wanted to see if this was still true and if it would work.

How do I handle duplicate content of the same product in Multiple product categories?
I am building a BigCommerce store for selling framed art. Many of the pieces of art will fall in more than one product category. Let's say I have a framed print of a photograph of a western landscape. This piece of art would fit into these categories; "western", "landscape", and "photography". I would have three pages with duplicate content for just this one framed print. Will google give me less page rank due to this? Can all the link juice be given to just one of the three categories by use of rel=canonical? If so, does anyone know how to do this for a bigcommerce site? I would appreciate any feedback. Removing Redirected URLs from XML Sitemap
If I'm updating a URL and 301 redirecting the old URL to the new URL, Google recommends I remove the old URL from our XML sitemap and add the new URL. That makes sense. However, can anyone speak to how Google transfers the ranking value (link value) from the old URL to the new URL? My suspicion is this happens outside the sitemap. If Google already has the old URL indexed, the next time it crawls that URL, Googlebot discovers the 301 redirect and that starts the process of URL value transfer. I guess my question revolves around whether removing the old URL (or the timing of the removal) from the sitemap can impact Googlebot's transfer of the old URL value to the new URL.

Does part of a keyword phrase need to be repeated in a sub folder?
I have a page that targets "web design" at /web-design/ I also have a page at /web-design/price-cost-calculator/ In the second page the target keyword is "web design price" and "web design cost". Do I need to repeat the "web design" part in the sub folder, or is it sufficient to have it in the root folder? I.e., /web-design/price-cost-calculator/ or /web-design/web-design-price-cost-calculator/
