Keyword Planning and Site Architecture

Hi all,
I'd like to know your thoughts on keyword planning and site architecture.
I thought it was best practice to structure your website so specific pages target certain keywords. The titles, meta desc. and content on these pages should be unique to that page. I've had good success ranking pages this way.
But! How come so often you'll see a website that has no keyword planning ranking so well?
Let's take the example: "Bamboo Sheets". A top ranking website in my country sells all kinds of bamboo bedding, including sheets, towels, pillow cases, etc. They have "Bamboo Sheets" in the title & meta description for the main category page (www.store.com/bamboo-sheets) - which is where it should be. But then I see it again on the homepage title & meta (www.store.com) and other pages of the website.
So why aren't they cannibalizing their own pages? And why do they blog about Bamboo Sheets and not cannibalize the keyword from there?
Is landing page optimization just a myth? It seems entire websites built around a keyword rank just as well, and in most cases, much better than sites with keyword specific landing pages. If you only sell one product this isn't a problem, but for websites that offer multiple products or services, it's incredibly frustrating when trying to compete.
It's like Google still gives a lot of authority to keyword rich domain names and business names.

Ranking a homepage for keywords
We recently found a handful of keywords we would like our homepage to rank for (for example - customer experience). On our homepage we have articles (4-5 posted daily) that feature the keywords we are targeting (one being customer experience). How do the keywords we are using in our daily articles that are posted to the homepage affect the overall keyword ranking for the homepage? In other words do the keywords used in the articles (title, first 2-3 paragraphs, meta description, etc.) all roll up/build up to the homepage's keywords or how does that work?

Keyword tracking- Local
Silly question about Local ranking monitors. If I have a local client in Pheonix, AZ and I want to track rankings for keywords. Is it best to monitor city+keyword or just keyword? I have ran tests with multiple clients and locations, and cannot ascertain the difference- as far as rankings go. I appreciate all input.

Keyword Ranking Issue
For one of my campaigns I have running all the keywords are appearing as having a position > 50, when in fact I know these keywords are appearing on the top 5 pages of Google after a manual search. Can anyone have a solution for this? Thanks

Keyword selection and search counts
I am a new pro member and have noticed that a lot of my keywords are very similar. i.e. "piano movers Atlanta" vs. "Atlanta piano movers" vs. "piano movers in Atlanta" Is there an accurate way to see search counts for each of these terms do determine which one I should target? Does anyone have any recommended tools or strategies?

What is the best way and best tool to conduct Keyword Research for my site? With the Pro service is there a way to find out better keywords to add to my website? I am receiving emails that my web site is being crawled and will be completed in seven days and so far this is not a "Report Card"? is that correct? Thanks for any information

Stop List and Keywords
I've came across a suggested list of words that google will ignore in your content, if this is correct and one of our main keywords is one of those words, will it lose effectiveness? We are trying to get #1 SERP for "Self Tan" and it seems "Self" is one of the words ignored - so should we just be focusing on Tan? Any tips / advice would be great!

Are the Volume numbers from the Keyword Difficulty Tool identical to Google Adwords Keyword Tool?
I use the Keyword Difficulty Tool daily. Because of the troubles with Google's API I can no longer see the search volumes. I still want to use the tool for difficulty numbers because I think this is a much better number than the Google Adwords Competitive bar. If I use the Adwords keyword tool for volume numbers, will that be sufficient? Is this the same as what Moz usually provides? If no, where is the best place to gather volume numbers? Thanks!
