Help! Getting 5XX error

Keep getting a 5XX error and my site is obviously losing ranking, Asked the hoster. Nobody seems to know what is wrong. Site is www.monteverdetours.com
I know this is probably an obvious problem and easy to fix but I don't know how to do it!
Any comments will be greatly appreciated.

Never heard of it but it seems to be a standard PHP/MySQL CMS. That kind of hosting is a dime a dozen.
if you're looking for a full service host they have a page of recommended hosts.

Thank so much for you response. I am looking to change hosting as soon as possible. I am based in Costa Rica and my site is in Modx. Any suggestions of a good hosting company that supports MOdx??

Ah, I see now (was looking at the server headers by mistake). Yeah, it is returning a 500. Your host will have to fix it for you because it's either a problem with your software or the web server. If they can't, you need to change hosting companies. That's inexcusable for any hosting company to have their software return a 500. And there's something right with the server because the AJAX calls and images are returning 200 (which is normal).

A 500 error typically means some kind of software failure in the web server.
What URL is producing the 500 error? Or is it the same URL every time?
You're running Apache so if the web host software isn't set up right, I could see a segfault causing a random 500 error.

Increase in Crawl Errors
I had a problem with a lot of crawl errors (on Google Search Console) a while back, due to the removal of a shopping cart. I thought I'd dealt with this & Google seemed to agree (see attached pic), but now they're all back with a vengeance! The crawl errors are all the old shop pages that I thought I'd made clear weren't there anymore. The sitemaps (using Yoast on Wordpress to generate these) all updated 16 Aug but the increase didn't happen till 18-20. How do I make it clear to Google that these pages are gone forever? Why are my webpages not getting indexed?
I want to figure out why a lot of my pages for my website are not getting indexed by google. I have installed the SEO plugin by Yoast to my wordpress website. Under the titles and meta section of the plugin options I have set categories and tags to noindex. In WMT, google is saying that all my category pages and most of my tag pages are not being indexed. I want to make sure that the reason these pages are not being indexed are because of the SEO plugin. I want to prevent duplicate content so that is the reason I have set my categories and tags to noindex. Please respond if you know the absolute answer, its very important that I have my website indexed the proper way I want it to.

Rel=Canonical Help
The site in question is www.example.com/example. The client has added a rel=canonical tag to this page as . In other words, instead of putting the tag on the pages that are not to be canonical and pointing them to this one, they are doing it backwards and putting the same URL as the canonical one as the page they are putting the tag on. They have done this with thousands of pages. I know this is incorrect, but my question is, until the issue is resolved, are these tags hurting them at all just being there?

If we put relevant RSS feeds on a site, will it help the SEO value? Years ago, I shied away from RSS feeds because they slowed the site down and I didn't like relying on them. However, the past couple years, the Internet has become better, especially in Alaska.

NEED HELP ASAP: SERVER ISSUE
Hey guys, Some of you may be aware of our story. We have a website about or son who was born with Down syndrome. Two days a go a post I wrote went sort of viral, and I woke up this morning to an email from my host saying they had to take my site down as an emergency because of the amount of resources it is using.
