Hyphens and underscores vs hyphens and double hyphens

Hello. I am thinking of changing the hyphens to underscores. The problem is that i have a magento extension for improved navigation and if you choose to use hyphens for special characters it will not let you choose this also for separating attributes. It will allow you only bouble hyphen.
So when i go to sub-category https://www.shoponline.gr/peripoihsh/somatos/kremes-somatos/ and filter two brands (victoria's secret and frais monde) it returns the url https://www.ishoponline.gr/peripoihsh/somatos/kremes-somatos/victoria-s-secret--frais-monde instead of the iniital url with undescore which was https://www.ishoponline.gr/peripoihsh/somatos/kremes-somatos/victoria_s_secret-frais_monde. So it is "victoria-s-secret--frais-monde" vs "victoria_s_secret-frais_monde".
Any suggestions? Thank you in advance.

Yes, do that. All hyphens and 301 from the underscored.

Thank you for responding. Although by mistake, my question was the other way around. I now have underscores and intend to go to hyphens. My hesitation is about double quote. So you would advice to go from "victoria_s_secret-frais_monde" to "victoria-s-secret--frais-monde" with making 301 redirections? Some of the urls might have some juice. Thank you.

Google officially stated that uses hyphens and prioritize them. I'd advise you against making that change. Please don't.

Noindex vs. page removal - Panda recovery
I'm wondering whether there is a consensus within the SEO community as to whether noindexing pages vs. actually removing pages is different from Google Pandas perspective?Does noindexing pages have less value when removing poor quality content than physically removing ie. either 301ing or 404ing the page being removed and removing the links to it from the site? I presume that removing pages has a positive impact on the amount of link juice that gets to some of the remaining pages deeper into the site, but I also presume this doesn't have any direct impact on the Panda algorithm? Rankings of Subdomains vs. Main Domain
Here's a puzzler... Our main domain (www.ides.com) doesn't appear in Google (but does on Bing and other engines). We think this is due to duplicate content which we're fixing. However our website's subdomains continue to appear prominently in SERPs, even on Google - here are some examples: IDES Prospector = prospector.ides.com IDES = support.ides.com Cycolac FR15 = catalog.ides.com Why would Google penalize a main domain and its subdomains?

Schema markup for video vs. Authorship: How will the SERP look?

Google inconsistent in display of meta content vs page content?
Our e-comm site includes more than 250 brand pages - lrg image, some fluffy text, maybe a video, links to categories for that brand, etc. In many cases, Google publishes our page title and description in their search results. However, in some cases, Google instead publishes our H1 and the aforementioned fluffy page content. We want our page content to read well, be descriptive of the brand and appropriate for the audience. We want our meta titles and descriptions brief and likely to attract CTR from qualified shoppers. I'm finding this difficult to manage when Google pulls from two different areas inconsistently. So my question... Is there a way to ensure Google only utilizes our title/desc for our listings?

404 vs 301
My company is planning on discontinuing one of the product lines we currently offer. In terms of SEO, would it be better to implement a 301 redirect to a generic page page (such as the homepage or main product page), or to create a custom 404 page explaining that the product line with links to other pages (according to the most next viewed pages in Google Analytics). .us domains vs .com - What does Google Think?
Suppose I had 2 domains, carloans.us & carloans.com with exactly the same links profiles, and content (not duplicate but you know what I mean). Would Google favour the .com domain? In my experience, yes. But I might be wrong?
