Will Google hit me because I hide my H1 tag?

I read an article this morning regarding keywords on a web page. In the article it said that Google would hit anyone putting keywords on a web page but then hiding them from anyone visiting the website. This makes sense.
What it did make me think about though is the technique I use when building a website. If, for example, I'm building a website for "Acme Cheap Products". In the header of the page, I will have a H1 tag as well as an image tag for the company's logo.
As the logo has the company name on it, I would usually put the company name in a H1 tag as well, and then hide the H1 tag, so I wouldn't have a logo and then a title next to it saying the same thing as the logo.
The question is though, would this sort of technique trigger Google in to hitting my site?

Hi Al,
Using hidden text is considered black hat and has been identified as spam by most of the major search engines.
Best practice is to use the alt tag for images. There is no need to have a hidden h1 tag and this could even harm your site if you continue to use hidden text.

Will this affect the local SEO listings in Google?
So, I'm trying to list the same exact address across all local listings for a client. How "exact" do they all need to match in order for them to be optimized for the 7-pack listings? Google authorship what am i doing wrong

Canonical tag problem
Hello I'm newbie here i dont know very well about seo but i would like to ask your help? I'm running report about my website and on report I dont have canonical tag on my products. But if i check from on page report link by link it shows that I have canonical tag. At the same time if i check my pages code i can see below canonical tag codes? Do we use canonical tags wrong? What can cause this different information? Could you please help me? Is it important to use canonical tag beginning or end? Will rel canonical tags remove previously indexed URLs?
Hello, 7 days ago, we implemented canonical tags to resolve duplicate content issues that had been caused by URL parameters. These "duplicate content" had already been indexed. Now that the URLs have rel canonical tags in place, will Google automatically remove from its index the other URLs with the URL parameters? I ask because we have been tracking the approximate number of URLs indexed by doing a site: search in Google, and we have barely noticed a decrease in URLs indexed. Thanks.

Want to Target Mobile site for Google Mobile Version and Desktop Site for Google Desktop Version
I have ecommerce site with both mobile version and desktop version. Mobile version starts with m.example.com and full version starts with www.example.com I am using same content through out both site and using 301 redirection by detecting user agent vice-versa. My both sites are accessible to crawl by any google spider. I have submitted both sites's sitemap to GWT and mobile site having mobile sitemap xml, so google can easily recognize my mobile site. Is it going to help to rank my both sites as per my expectation? I need to rank for mobile site in Google mobile and ranking for desktop site in Google desktop version. Some of pages of my mobile site are started to appearing in Google desktop version. So how I can stop them to appear in Google desktop? Your comments are highly welcome.

Header Tags
Ok so I am writing different pages and the first heading is an H3 just because I wanted to it be a certain size. Then as you see the content, I have an H1 tag. Example page: http://www.oxfordmshomes.net/condos/acadia-court-Oxford-MS you can see that "Acadia First" is the first thing you see on the page and it uses an H3 element. Long story short, my hierarchy is wrong. Does this have any negative effect on my SEO efforts?
