Screaming Frog Content Showing charset=UTF-8

I am running a site through Screaming Frog and many of the pages under "Content" are reading text/html; charset=UTF-8. Does this harm ones SEO and what does this really mean? I'm running his site along with this competitors and the competitors seems very clean with content pages reading text/html.
What does one do to change this if it is a negative thing?

This is nothing to worry about at all. UTF-8 is simply a type of character encoding and is set in the websites to instruct web browsers on how to interpret the character encoding. See- http://screencast.com/t/s4I2RNsgqUh
As it's not negative and perfectly normal, there's no need to change it at all.

.xml sitemap showing in SERP
Our sitemap is showing in Google's SERP. While it's only for very specific queries that don't seem to have much value (it's a healthcare website and when a doctor who isn't with us is search with the brand name so 'John Smith Brand,' it shows if there's a first or last name that matches the query), is there a way to not make the sitemap indexed so it's not showing in the SERP. I've seen the "x-robots-tag: noindex" as a possible option, but before taking any action wanted to see if this was still true and if it would work.

Do quizzes hurt your site? Thin content?
We did a 10 question quiz awhile back relating to something we were sponsoring, and it had a decent response. However, considering quizzes just aren't that long, does that contribute to making the site's content thin? Obviously, it's not a major problem at the moment, but if we did more of them would this be an issue? If there's no real issue, I'd prefer not to no-index them, but I'd love some feedback to help make the decision. Thanks, Ruben

SEO for User Authenticated Content
Hi Everyone - I have a potential client who is seeking SEO for a site that contains about 95% of content only accessible through user authentication . Does anyone have tips for getting this indexed without having to open it up to the public? I was considering adding "snippets" into the robots.txt or creating an additional page with snippets linking to the login page. I'd appreciate any thoughts! Thanks!

Localized domains and duplicate content
Hey guys, In my company we are launching a new website and there's an issue it's been bothering me for a while. I'm sure you guys can help me out. I already have a website, let's say ABC.com I'm preparing a localized version of that website for the uk so we'll launch ABC.co.uk Basically the websites are going to be exactly the same with the difference of the homepage. They have a slightly different proposition. Using GeoIP I will redirect the UK traffic to ABC.co.uk and the rest of the traffic will still visit .com website. May google penalize this? The site itself it will be almost the same but the homepage. This may count as duplicate content even if I'm geo-targeting different regions so they will never overlap. Are recipes excluded from duplicate content?
Does anyone know how recipes are treated by search engines? For example, I know press releases are expected to have lots of duplicates out there so they aren't penalized. Does anyone know if recipes are treated the same way. For example, if you Google "three cheese beef pasta shells" you get the first two results with identical content.
