SOS - I have done a terrible mistake: How can I make it up?

Two weeks ago i changed the urls on our website, without redirecting the old ones. This has led to a dramatic drop in ranking.
What should i do:

redirect the old pages and keep the new ones
-
Change the urls back to the original ones
Which of these to methods will result in best ranking?

As Ray-PP & Silver Door have mentioned 301 is the best option here. You may well have to wait for Google to discover the new links but fear not, whilst you are waiting you can be pro-active getting in touch with webmasters who have the links on their pages and ask them to update the links. You can also submit some of your more important links to e.g. twitter to help them get indexed that bit quicker if you're in a really hurry but I wouldn't spam this and only use it for some of the more important areas.
As for the how to it really depends on your CMS system. As for which method, currently your in the same mess for which ever tactic you choose so find the URL structure you like and go for that.

No, generally a 301 redirect will transfer 99%+ of the authority to the new link. I would anticipate waiting about 2 weeks before noticing the new URLs rank as high as the old URLs.
If you change the URLs back to the old structure, those rankings should return more quickly. However, if you new structure is more user friendly, it may be a good idea to make the change now rather than later, when the URLs gain even more authority.

99 %... so I don't get punished more? How fast will I see the increase? How do I redirect pages?

We changed something in the cms.. instead of having the heading "solutions" we changed to "products" not thinking about the fact that all the sites linking from this page now would change their urls.
We could change back, because the change wasn't that important. But would we then get the same ranking on google like we had before the change two weeks ago?
If I should redirect - how do I do it? And how much do I get punished SEO-wise by changing?

Make sure to 301 the old URLs to the new URLs - this will pass along 99% of the authority and you should see an increase in the SERPs for your new URLs.

What was the reason for changing the URL in the first place?
This will determine if you redirect the old ones or revert back.

How we can rank two keywords
Here is my example. I developed a property inspection app, where the keyword I try to rank is property inspection app, and property inspection software. Property Inspection Software got slightly more traffic than app. I would like to rank both of this keyword high for my main website, but there is only one title, one H1 tag I can use to have keyword, where if I use "App" there is no way to have "Software" on the title, etc. How can I deal with such a case? Can anyone see what hurt me in my traffic

I have compared the dates to when updates have been rolled out (panda, penguin, page layout, top heavy, etc...) and I cant match these dates with any of them. Can you 301 redirect to a page that has other pages 301 to it?
Two years ago updated url page to include better keywords and used a 301 redirect from the old page to the new. so www.example.com/keyword-1st-generation.html now points to ... www.example.com/keyword-2nd-generation.html That moved the pages up in ranking, but now have better kw for the url, so is it okay to redirect the /keyword-2nd-geration-html to www.example.com/keyword-3rd-generation.html And what is a good length of time before removing the 1st-generation url? It's been 3 years and there is no chance of using it again. Plus, no sign of it in analytics.

Should I make All My "Non-Money" Pages No-Follow?
I'm branching out here from my novice seo status . . . In an effort to channel page rank to the pages I wish to rank for should I make all my non-money pages no-follow. Can my amount of internal linking seem spammy ?
Ecommerce site. I am optimizing for each producer of products on a separate page. Atm my provider does lack some functions(i cant put in H1 , title and can put text only product pictures) on the product pages - like here http://www.epleskrinet.no/smafolk/M_23 . The are updating within 1-2 months to allow me do this. This has led to actually some of the products themself ranking higher that the producer page. what Ive been doing is to put anchor text and link back to the producer page for all 9 products on this page. Is that a problem or should i just do it like this ? thanks
