301 redirect: canonical or non canonical?

Newbie alert!
I need to set up 301 redirects for changed URLs on a database driven site that is to be redeveloped shortly.
The current site uses canonical header tags. The new site will also use canonical tags.
Should the 301 redirects map the canonical URL on the old site to the corresponding canonical for the new design . . . or should they map the non canonical database URLs old and new?
Given that the purpose of canonicals is to indicate our preferred URL, then my guess is that's what I should use. However, how can I be sure that Google (for example) has indexed the canonical in every case?

The most accurate way is to do it manually. Doing a site:YOURDOMAIN.com in Google will alert you to most of the ugly URLs you want to get rid of.

Any URL's that are indexed should be redirected to the correct version. For example if you have both a database URL and a canonical URL both indexed in search results, then they both should be sent to the correct version.
Also, having only canonical URLs in your submitted sitemaps will help to remove a lot of these, even without redirects.

Ok, here is my understanding regarding canonicals and how it works with redirect. 301 redirect means the old URL is shifting its all value and user to the new domain (unlike 302 that only derives traffic but contain the URL value to itself only).
Whereas Canonicals indicates Google the preferred version of the domain so theoretically if you use the canonicals on every page Google should pick the redirected page as 301 will take Google to the final destination anyways…
What will I do?
If Possible, I will map all the redirected URLs and remove canonicals from there just to be on the safe side but I don’t think having there will be much of a difference as Google as at least that smart.

I have tons of links that I have had added a redirect to after creating my companies new website. Is it bad to have all these 301s? How do I permanently redirect those links? Using a 302 redirect for language variants. How should I use the canonical?

The current setup is like so... www.site.com 302 redirects to.. www.site.com/de/ I want to add canonical tags on every page to avoid duplicate content but I'm not sure about the homepage. What if my developers tell me they can only handle a certain amount of 301 redirects?
We recently launched a new site and I felt the need to redirect all of our old site URLs to the new site URLs. Our developers told me they would only be able to do about 1000 before it starts to bog down the site. Has anyone else came across this before? On top of that, with our new site structure, whenever our content team changes a title (which is more often than i had hoped), the URL changes. This means I'm finding i have many other redirects I need to put in place, but cant at the moment. Advice please??

How do I fix a 301 Redirect Loop?
Saturday I waas doing some correcting of some duplicate titles, including nofollowing tags, etc. (my main problem was duplicate titles due to tags and categories being indexed). Now this morning I see that one of my pages refuses to load, citing a 301 redirect loop. http://www.incredibleinfant.com/feeding/switching-baby-formula/ Originally, the page was posted under the wrong category. http://www.incredibleinfant.com/uncategorized/switching-baby-formula I resaved it under the correct category (feeding) and now it won't load. Will a timed 301 redirect work for Googlebot?
Our client is changing brand names and domain names. We know we need to 301 redirect the old domain, but for marketing reasons we want people to see a short message saying that the brand has changed and that they will be redirected. Example: | | Our concern is how, or if, Googlebot will intepret the redirect. Will this accomplish our SEO objective of moving the value of the page to the new domain, or do we need to do just a plain old fashioned 301 redirect and not even let the page load? 301 redirects and seo..
I bought a domain and it has nice traffic. It only has about 5 main pages in php When i got the site i switched to html because php was overkill. I did the 301 and google deleted the php files and replaced with html version when i check site:domain.com It has been about 7 days. I DID NOT use 301 for each of the 5 pages to go php to html instead is used this code RewriteEngine On

When is it safe to remove 301 redirects?
I have created over 500 301 redirects in my .htaccess file, some of them are more than 2 years old now. Should I delete them? I don't like seeing the "notices" number in crawl diagnostics so high 😞

Does 301 redirect pass "freshness?"
Greetings! I work for an online retailer, and we recently launched a voting tool that allows customers to voice their opinion whether or not we should carry a new item. It's been a huge success and we've been generating thousands of comments. As a result, it's helped our SEO, and our products are showing up on the first page for some keywords without having any external links pointing to these pages. Our plan is to sell a product if it does well during the voting period. Unfortunately, we're not able to process the sale on the voting page, and need to redirect users to another page on our site. I understand that a 301 redirect transfers "linkjuice" to the new destination URL. But does it also transfer "freshness?" I ask because our new landing pages will not be updated as frequently as the voting pages. Example of our Voting Page:
