How keywords and subfolders connect

I'm working on restructuring my site. We have main topic areas, and any given visitor will ONLY be interested in 1 of those topics. So to consolidate the information into a simpler format, I want to take all the various pieces of content and wrap them under a given topic. [There is a question in here, I promise.]
So I want to create www.domain.com/topic/subtopic-1, /topic/subtopic-2, etc. [Yes, I will apply all necessary redirects for any new URL restructuring.]
Now here's the question: If I want to rank for "Peanut Butter Sandwiches with Jelly" and "Peanut Butter Sandwiches with Jam," will I be able to structure the URLs as /peanut-butter/sandwiches-with-jelly/, or should I go /peanut-butter/peanut-butter-sandwiches-with-jelly? And please note, /peanut-butter/ will likely redirect to /peanut-butter/subtopic-1/ since it won't make sense to have /peanut-butter/ on its own. [PB&J is just an example.]
What's the best way to go about this? Any recommendations? I really appreciate your help.

My experience with subtopics in URL structure is that they are over-rated. Use the main category to help the user know where they are in the site and potentially about the topic that the page might be about. If you want to drop keywords, do it in the category or in the slug for the name of the page. You can work it in there and it gives you more flexibility. This also helps with making your page be closer to the root folder vs ending up being too far down in a folder structure.
When I have used sub-categories you always end up with content that could be in two different ones and so then you have to decide which one is the better one, etc etc. You will end up having to rework your URLs later due to issues with your sub-categories. The only way I have seen subcats work well is when you have something like /state/city/zip or something else where your end item is only in one cat, subcat, etc.
I would not do the /peanut-butter/ to redirect to /peanut-butter/subtopic-1 - that makes no sense from an organizational perspective. If peanut butter is not a strong enough category by itself, it should not be a category to start with. You need to rethink what your category topics are. Ideally, /peanut-butter/ is a keyword combo you want to rank for and has great traffic potential that converts. It should be a hub page for your site for that topic.
Find good categories, work in the keyword into that category or if not work it into the slug for the name of the page. If you want a good example, look at how the Moz site is setup. Also, remember that keywords in the URL are good for SEO, but you really get more bang for the buck for a good title and content and links into that content. Dont overthink the URL.

Homepage keeps disappearing and reappearing for important keywords every few days
My homepage keeps disappearing from the SERPS for my most important keywords. My home page has been in number 2 position for years. When the home page disappears it will not even show in a Google search for my business name although it is still indexed. When the home page is not showing an internal page shows instead but in position 6. When the home page is back the internal page does not show. There are no issues being reported in Google Webmaster. When I realise that it's down I do a fetch as Google and request reindexing. No idea if this is bringing it back or not? We are so worried about this and totally at a loss. Page titles, Keyword rich or single keyword?
Hi Everybody, My previous SEO company had set the page titles like : keyword | keyword | keyword | keyword | keyword | keyword | keyword | My new one is changing every thing and replacing them with sentences including one or two keywords in each one. Could you please let me know which one is better approach? Thanks

SEO Ecommerce Keywords
Hi guys got a question regarding ecommerce seo do you think its a better idea to target more long tail terms and try get links directly to product pages, brand pages and categories. Rather than focus on short keywords that do bring in good traffic but are very broad, i will prob do both, but i would like a second opinion please about other users strategies thanks

Ranking For Misspelling of Primary Keyword
I have been baffled for the past few months for ranking for the misspelling of our primary keyword BELIZE in the Google U.S. Serps. We are nowhere to be found, but are ranking for the misspelling BELIZ (without the final "e"). We have been online since 1995 on page one everywhere. 11 months ago we did a site redesign changing over to WP as a CMS. We changed all pages from widget-example.html to widget-example and properly 301ed all pages after deleting the old pages. Then we accidentally de-indexed the site for a month due to a robots.txt error. This has been corrected 4 months now. We shared this on the Google Webmaster forums and some kind folks helped with advice - nothing major in our opinion but we implemented most of the tips given. We are doing fine everywhere with all search engines and Google itself in other areas Google.ca Google.bz Google.mx for example. But in our primary market is the U.S. where the majority of our readers are - tourists and retirees looking for our information - we do not exist. The joke is that searching for BELIZ in the U.S. Google Serps has us on Page One. It is a joke that is NOT funny - or maybe some human evaluator made a mistake or is playing a sick joke? We have done a reconsideration request in case there was a manual penalty and we received the no manual penalty form letter. I notice increasingly in Google Live Analytics people typing in our full domain name - I guess out of frustration not getting the site when inputting the primary keyword. I find that I can write a new article and in a couple of weeks it ranks in the top couple pages. Many other pages are found via long-tail only. I find it intriguing that yesterday I wrote a very small article, a press release actually, and today searching for the misspelling BELIZ in the U.S. Google Serp the root domain is ranked #2 and the snippet and image displayed is from this little article which is nothing really great. Keyword penalty?
One of our pages seems to have disappeared from Google SERPs, I did some analysis/research into this to try find out what is going on. Nothing jumps out.. - No noticeable traffic drops, especially on/after the Panda & Penguin updates. - Thorough checks on related keywords – no noticeable drops - Anchor text – brand name & natural anchor texts - 2/3 word phrases Keyword density 3-5% in content - No Google Manual Penalty with Notification in WBTools - Robot.txt checked - Checked sitemap.xml (recently updated) I expect if the page has dropped in SERPs then the traffic would drop also.. Anyone had same experiences or ideas how this page is affected?
