Business Name Change and Local Listings

Hi, I'm working with a local bakery. We're going to change the name, rebuilt the site and branding, change to a new domain. My question is:
Is it better to do all the local listings now, then go and update the name and website when we launch, or is it better to wait until the new site launches?
Also, we're merging the catering brand into the new brand, what should I do with the old profiles from the catering business? There are 7 good reviews on various platforms (Facebook, Yelp, Google)

I would change listings, social media information, and other external items once you've launched the new site. Think of it this way: your website is your main source, while the rest are secondary. Your website should always take precedence when it comes to change, especially when considering consistency with your users. If they go to Yelp, Google+, etc. and see "Bakery Y", but your website still says "Bakery X", it'll be both confusing and inconsistent.
As for your second question, about the catering business:
- Facebook: you can create a new page (try to get a short and related URL!) and "merge" the old one into the new. Ensure that you clarify this change in a post, however, as not to confuse followers!
- Yelp: Much trickier. In this case, the only option may be to try to change the name of the current listing, rather than creating a new one. Not only are reviews something you never want to give up, the length of time your listing is up actually plays a roll in rankings on Yelp (similar to search engines for websites).
- Google: This is actually a combination of the two previous. You can keep the page you have now (especially good if you have reviews) and change the name and branding. If there's some reason that's not possible, or if you've yet to create a solid Google Local / My Business, then you may choose to create a new page and contact Google, asking to move assets to the new from the old. The latter is more complicated, and can take a long while, however.

Where does the small description on a business listing come from in google maps?
Hi All, Simple question, but I'm struggling to find the answer, so I hope someone is able to help. Incorporated Business Listings
Hey Community! My agency has been working with more companies that are Incorporated lately who are requiring SEO assistance. A few of our customers have their business listed to include the Business Name, Inc. in the Google/Facebook listing and some of them don't. Local Optimization for Multiple Businesses Issues/Strategy
Hello Everyone, So we have a client with a geo-focused ‘sports’ site but they also have a second site they are using to promote the seasonal camps they run. Local demographics and traffic would be a priority and main source of traffic. We know it would be ideal to have all of it consolidated but in this case a separate site was needed. The camp site would be under a different Name but they do not really have a different physical location from the primary site. Assuming we can’t find a discernable different location we could use; from a local optimization perspective we have two questions: Does that mean that we shouldn’t venture into local listings that need an address and trying to rank for map results and instead shift focus to other local strategies (i.e. geo-relevant content, link acquisition….etc.)? – We don’t want to dilute or devalue the primary site at all but if possible would like to be able to come up for both. Should we avoid listing the address on the camp site as text for similar reasons? We know the same business could be listed for multiple locations but any suggestions on the opposite approach or input would be very appreciated. Should I change my local listing Service type from Brick and Mortar to Service Area in Google? And will it affect my ranking in a negative manner?
Currently my company Big Boy Bail Bonds, Inc is ranking very well for the city it is located and, currently service type is brick and mortar. But my Company does not only service people at our location but we service the entire county of Los Angeles. And I wanted to know if you would advise me on weather I should change the service type from brick and morter to service area. and if doing that would effect me in a negative manner when it came to my ranking? Hotel Local Listings Greatly Varying With Date
Searching for accommodation in a local region brings up a local listing block (e.g. http://puu.sh/irEoJ/635140594d.png). When clicking through to the block and changing dates, the order of the listings vary greatly. See attachments for 4 samples. How is Google deciding to order these listing blocks? 'People Also Searched for' appears on some but not all local businesses, why? (Google Local Knowledge Panel)
I have a client who does not want the 'People Also Searched for' section on the Google Local Knowledge Panel to appear. I informed her that this is a standard part of the search presentation and that we cannot change. She then pointed out that the 'People also searched for' does not appear on her competitors' Google Local Knowledge Panels.
