Magento: Should we disable old URL's or delete the page altogether

Our developer tells us that we have a lot of 404 pages that are being included in our sitemap and the reason for this is because we have put 301 redirects on the old pages to new pages.
We're using Magento and our current process is to simply disable, which then makes it a a 404. We then redirect this page using a 301 redirect to a new relevant page. The reason for redirecting these pages is because the old pages are still being indexed in Google.
I understand 404 pages will eventually drop out of Google's index, but was wondering if we were somehow preventing them dropping out of the index by redirecting the URL's, causing the 404 pages to be added to the sitemap.
My questions are:
1. Could we simply delete the entire unwanted page, so that it returns a 404 and drops out of Google's index altogether?
2. Because the 404 pages are in the sitemap, does this mean they will continue to be indexed by Google?

To answer your questions:
1. So if you're 301'ing the page, it's not really a 404 page, it's a 301
So yes, you can remove the 301 redirect, making it a true 404 page (check that it returns a 404 code using fetch as google or a tool like urivalet.com).2. If they are in the sitemap, this won't prevent Google from removing them from the index, but it will throw an error. And not that many people care about Bing, but Bing is apparently super picky about having XML sitemaps perfect.
So yes I would just 404 them without the redirects.

We are adding existing customer reviews to Product Detail Pages pages. There are about 300 reviews per product so we're going to have to paginate reviews off of the PDP page. Ranking 1st for a keyword - but when 's' is added to the end we are ranking on the second page
Hi everyone - hope you are well. I can't get my head around why we are ranking 1st for a specific keyword, but then when 's' is added to the end of the keyword - we are ranking on the second page. What could be the cause of this? I thought that Google would class both of the keywords the same, in this case, let's say the keyword was 'button'. We would be ranking 1st for 'button', but 'buttons' we are ranking on the second page. Any ideas? - I appreciate every comment.

How to de-index old URLs after redesigning the website?
Thank you for reading. After redesigning my website (5 months ago) in my crawl reports (Moz, Search Console) I still get tons of 404 pages which all seems to be the URLs from my previous website (same root domain). It would be nonsense to 301 redirect them as there are to many URLs. (or would it be nonsense?) What is the best way to deal with this issue?

Whats the best way to remove search indexed pages on magento?
A new client ( aqmp.com.br/ )call me yestarday and she told me since they moved on magento they droped down more than US$ 20.000 in sales revenue ( monthly)... I´ve just checked the webmaster tool and I´ve just discovered the number of crawled pages went from 3.260 to 75.000 since magento started... magento is creating lots of pages with queries like search and filters. How to check a website's architecture?
Hello everyone, I am an SEO analyst - a good one - but I am weak in technical aspects. I do not know any programming and only a little HTML. I know this is a major weakness for an SEO so my first request to you all is to guide me how to learn HTML and some basic PHP programming.
