What is the SEO effect of schema subtype deprecation? Do I really have to update the subtype if there isn't a suitable alternative?

Could someone please elaborate on the SEO effect of schema subtype deprecation? Does it even matter?
The Local business properties section of developers.google.com says to:
Define each local business location as a LocalBusiness type. Use the most specific
LocalBusiness
sub-type possible; for example, Restaurant, DaySpa, HealthClub, and so on.Unfortunately, the ProfessionalService page of schema.org states that ProfessionalService has been deprecated and many of my clients don't fit anywhere else (or if they do it's not a LocalBusiness subtype).
I find it inconvenient to have to modify my different clients' JSON-LD from LocalBusiness to ProfessionalService back to LocalBusiness. I'm not saying this happens every day but how does one keep up with it all?
I'm really trying to take advantage of the numerous types, attributes, etc., in structured data but I feel the more I implement, the harder it will be to update later (true of many things, of course).
I do feel this is important and that a better workflow could be the answer.
If you have something that works for you, please let us know. If you think it's not important tell us why not? (Why Google is wrong) I understand there is always a better use of our time, but I'd like to limit the discussion to solving this Google/Schema.org deprecation issue specifically.

See the comment(s) here from danbri (Dan Brickley, Schema.org webmaster), last one matters though and should address your exact situation. You may not even need to make any changes really, see if you need to and see if it is worth the effort and time.

Research on industries that are most competitive for SEO?
I am trying to see if there is a reputable / research-backed source that can show which industries are most competitive for search engine optimization. In particularly, I'd be interested in reports / research related to the residential real estate industry, which I believe based on anecdotal experience to be extremely competitive.

Local food delivery SEO strategy
Hey guys, I'm working with a new company that doesn't have a brick and mortar storefront, they deliver. They basically deliver pre packaged smoothies in a VERY localized area (Vancouver, BC). I'm wondering how grandiose their goals should be re ranking for keywords that have non localized authority. What do I mean? Lets say their marketing pillars are "health education related to smoothies" "convenient veggies for smoothies" "(insert health benefit here) for smoothies". Should they be trying to compete for these keywords? Or should they really be trying to rank with keywords especially to Vancouver? Side note: What kind of effect does Country and Locality have on keywords that are generally used by content providers and not service related companies building out an inbound strategy? Is this cloaking or some dangerous blackhat SEO tactic?
Hey wonderful SEO guys, I need your advice. Would the following be considered cloaking, or a black hat SEO tactic. I performed the following search for Guess tops on Google: "Guess women's tops." Please see the attached image (Guess 1) of the description tag that comes up with this search. This not the primary page description tag, but when you visit the women's tops tag, that description is not visible on the page. In fact it is placed in the meta name section (see Guess meta-name description image). The information appears as a description on a SERPS depending on the keyword search performed, but the text is just not visible on the tops page. Can this be considered a form of cloaking? If not, is this a dangerous blackhat SEO tactic, or actually nothing to be worried about? We are thinking of doing something similar with some of lengthy homepage introductions-making them invisible, but still appearing on SERPS, as long as it relates to content that is clearly on the website, or what the website is about. What's with Google? All metrics in my favor, yet local competitors win.
In regards to local search with the most relevant keyword, I can't seem to get ahead of the competition. I've been going through a number of analytics reports, and in analyzing our trophy keyword (which is also the most relevant, to our service and site) our domain has consistently been better with a number of factors. There is not a moz report that I can find that doesn't present us as the winner. Of course I know MOZ analytics and google analytics are different, but I'm certain that we have them beat with both. When all metrics seem to be in our favor, why might other competitors continue to have better success? We should be dominating this niche industry. Instead, I see a company using blackhat seo, another with just a facebook page only, and several others that just don't manage their site or ever add unique, helpful content. What does it take to get ahead? I'm pretty certain I've been doing everything right, and doing everything better than our local competitors. I think google just has a very imperfect algorythm, and the answer is "a tremendous amount of patience" until they manage to get things right.

2 clients. 2 websites. Same City. Both bankruptcy attorneys. How to make sure Google doesn't penalize...
Hi Moz'ers! I am creating 2 new websites for 2 different bankruptcy attorneys in the same city. I plan to use different templates BUT from the same template provider. I plan to host with the same hosting company (unless someone here advises me not to). The content will be custom, but similar, as they both practice bankruptcy law. They have different addresses, as they are different law firms. My concern is that Google will penalize for duplicate content because they both practice the same area of law, in the same city, hosting the same, template maker the same, and both won't rank. What should I do to make sure that doesn't happen? Will it be enough that they have different business names, address, and phone numbers? Thanks for any help!!

Structured Data Schema for Local business
Hi Where should you add ‘local business’ schema, the 'Home Page', ‘About Us’ page, 'Contact Us' page etc etc ? I presume the page with the address such as 'contact us' page but if say the address is on every page say in a footer for example is it ok to add address schema to every page ? I know someone who did this and havn't got any rich snippets out of it so presume best to focus on one primary page such as 'contact' or 'about' type pages ? Also: If your business serves multiple areas can you add schema for the other areas too or is it only for your primary business address ?

For example if your business address is listed in say ‘Wandsworth’ but you visit & serve customers in ‘Clapham’, ‘Balham’ & other regions of South West London, anyway of adding local business address structured data to your site for these areas too (to help target local searches including these other regions) Many Thanks
