Does optimization of PDF files for search matter in 2017? If yes, what is the optimal way to do it? Is there a risk that it will compete for rankings with the parent page that is it's linked to?

Yes optimising for pdf´s still matters and follow some specific optimization rules, You can find a great post about this on SEJ https://www.searchenginejournal.com/pdf-seo-best-practices/59975/.
In relation to competing with the parent page, the pdf is just another page and as such eligble for ranking dependent on the content. If the pdf contains the same content as the parent page than it would be better to use a canonical to the parent page. Otherwise its will compete as much as normal pages would do, based on there content.

That is, I'll be doing keyword research in Keyword Explorer or Gooogle Search Console, and for the most relevant keywords, I find either very low search volumes, null search volumes, or "Data not available." Target Search Terms Changed - does this affect traffic?
We spent the last 12 months targeting a particular search term (mortgage broker) and have been ranking well for it consistently for about 6 months now. We have decided to change the target search term to something else (insurance broker) but noticed that our traffic has started to decline since we started doing this. We are still ranking well for the initial search term, and our ranking is slowly improving for the new targeted search term in SERPs but traffic is down about 60% from January. Is it normal/expected for this to happen?

SERPs for English search terms in Google.es show NY and USA companies?
Hey Mozzers, I'm working for a client offering legal services in Spain for people from the UK. Do "search keywords" matter?
I've been getting conflicting accounts about this. We aways fill out the Title Tag, Meta Description and Product Tags(<- for internal purposes) but we are concerned about how important the "search keywords" are. We use bigcommerce and they describe their value as this: "the search keywords are optional, but if entered will be used for two things. First, they will be used along with the product name to create meta tags for search engine (I know meta keywords are not important, so is this what they mean?). Second, they will be used to assist people when searching your products. (Also internal, right?)." For all intents and purposes I think it is NOT super important but I wanted to make sure before I let them take a back burner. Thank you for your help in advance!

Keyword search tool or API
Anyone have a suggestion for a simplistic (scaled down) version of a keyword research tool that I can put on our website? We need our clients to be able to perform some basic keyword research on their own without getting lost in the details of something too robust. Is there any sites other then Google Insights which have cataloged search volume for particular queries over time?
I know Google Insights gives this data, but the fact that it's relative to overall search requests make it very difficult to see anything other then obvious trends (Toys sell better in November, go figure?). Each query I've looked up[ is showing degradation over time, but I'm postulating that this has more to do with search volume increasing then with the volume of my queries decreasing.
