When considering on page / on site seo what process do you use / take to evaluate how much content is needed to be competitive and rank well?

Content needs to be good enough to share, and to be shared in the first place you need to be aggregating that content through social channels relevant to your target audience.
Try - Wow, Why and How
Content to "Wow" and stop them in their tracks - A big enough "why" to stay - A big enough "how" to meet their immediate need.
I agree with much of what has already been said here, however quality is not always engaging! Its nice, but it has to be attractive enough that it wows your visitors in the right way, and this is not easy, but definitely worthwhile.
Another problem with content that answers questions to quickly is bounce rate - if the answer arrives to quickly your audience will leave too quickly. finding content that slows down a visitor and holds their interest is important, but its a fine wire to walk.

I think if you are looking entirely just to rank you will have to look at the competition in the space. Be sure to consider quality of the content just as much, if not more, than the quantity of the content.
Additionally, you should be focusing on creating content that serves your target audience. Can you produce enough valuable content to serve the market as an authority? Or, will people find your site and go elsewhere to find what they are looking for?
You should also focus on creating your content for multiple readership paths, i.e. - headings, subheadings, images, and links. Not only does this provide value to your audience, but will help in your rankings as well, contributing again to the quality rather than the necessary quantity.

I go out to the SERPs where I want to rank and look at the quality of their content. Then I make a page that is better, a page that blows them out of the water.
The answer is not in the number of pages. Instead it is the quality of the single page for that search term. It usually requires a very substantive page to defeat what is at the top of the SERPs. Lots of easy-to-understand text, photos, tables of data, graphs, mabye a video. You can beat tough competition for difficult keywords with one page like that.
A nice gem is more interesting to people than a ton of crap.

This is a very subjective question Mark.
For example, if you work in a highly technical market, it could be assumed that you are going to need more content than normal to explain processes, technical features and research. However, if you are writing a sales page, you would need less content as you want to get your messages across with big call-to-action type messages and supporting content.
I would certainly also look at competition in the market and see what those who rank well, do. This can only really be used as a guide, but it can give you an idea.
Some say that the average page should be no less than 250 characters - others say no more than 750. There is no right or wrong answer, but you do need to focus on making it as comprehensive as possible.

SERP Ranking
Hi everyone, I'm struggling to figure out why our website has dramatically changed and is ranking far worse than ever. We were top for around 10 keywords, and had over 4 high traffic keywords in position 1. I think the website needs updating (as it's magento 1.7), and that the competition is increasing. How does putting a trial sign up code mid-blog post effect SEO? Do you think it will make my content seem less pleasing, therefor decrease the page rank??
I'm working on driving trials for our product - we have a number of blog posts that rank on page #1 of Google, and we get 2-3 trial sign ups per day from them. I'd like to put trial signup boxes about midway down each post to see if I can increase the number of trial signups that come directly from our blog. Do you think I can be "penalized" for this, since it's mid- blog-post content? Do you think Google will view this negatively?

Responsive Content
At the moment we are thinking about switching to another CMS. We are discussing the use of responsive content.Our developer states that the technique uses hidden content. That is sort of cloaking. At the moment I'm searching for good information or tests with this technique but I can't find anything solid. Do you have some experience with responsive content and is it cloaking? Opinions on Boilerplate Content
Howdy, Ideally, uniqueness for every page's title, description, and content is desired. But when a site is very, very large, it becomes impossible. I don't believe our site can avoid boilerplate content for title tags or meta-descriptions. We will, however, markup the pages with proper microdata so Google can use this information as they please. What I am curious about is boilerplate content repeated throughout the site for the purpose of helping the user, as well as to tell Google what the page is about (rankings). For instance, this page and this page offer the same type of services, but in different areas. Both pages (and millions of others) offer the exact same paragraph on each page. The information is helpful to the user, but it's definitely duplicate content. All they've changed is the city name. I'm curious, what's making this obvious duplicate content issue okay? The additional unique content throughout (in the form of different businesses), the small, yet obvious differences in on-site content (title tags clearly represent different locations), or just the fact that the site is HUGELY authorative and gets away with it? I'm very curious to hear your opinions on this practice, potential ways to avoid it, and whether or not it's a passable practice for large, but new sites. Thanks!

REPOST: How much does "overall site semantic theme" influence rankings?
Hello everyone on the new cool Moz! I've optimized sites before that are dedicated to 1, 2 or 3 products and or services. These sites inherently talk about one main thing - so the semantics of the content across the whole site reflect this. I get these ranked well on a local level. Now, take an e-commerce site - which I am working on - 2000 products, all of which are quite varied - cookware, diningware, art, decor, outdoor, appliances... there is a lot of different semantics throughout the site's different pages. Why Keyword Ranking Fluctuate?

Rankings going down down down
Hi guys, I know this is a little open ended, but any advice/ideas would be greatly appreciated. I launched a new site about 3 months ago (www.transfersandshuttles.co.za). I have had unique, useful articles written for it, and the site does provide a useful service. I have done a little link building and continue to do so. The site was making decent progress moving up the rankings for a few weeks, but now it just seems to get worse and worse.
