That's not ideal.
If you're trying to do this programmatically in a CMS, perhaps there's a way to do something like:
alt="Photo {Some Property}"
alt="{Some Property}"
alt="Photo"
Using "Null" is worse than leaving it blank, I think.

Is this fine?

Just is correct that the primary purpose of alt text to assist the visually impaired. Therefore, you should provide descriptive, concise alt text for every relevant image. So no, do not place hyphen between every word. You can (and should) use hyphens, accent marks, etc. for words that need them in alt text.
For non relevant, redundant images such as bullets and purely decorate images, you should use null alt text (alt=""). This will signal the screen reader to skip over the image.
Hope that helps! (Christy)

The primary purpose of the alt tag is to assist those visually impaired visitors who are using screen readers. Just make the tag descriptive of the image it is replacing - alt="Photo of Pole Vault Accident". For video thumbnails, you should do the same thing if you can. The video title will work fine.
I consider SEO a secondary consideration for alt tags. You may want to include targeted keywords there. But really, if you're focus is usability, and if the image is relevant to the content of the page, then you'll satisfy SEO when you focus on the alt tags' usability.
There are a lot of other more high-impact factors you can focus on - both on-page and off. If you've gotten on-page optimization down to alt tags, you may want to spend more time on link building.

Using Canonical Tags on Every Page
I'm doing competitive research and noticed that one of our competitors (who outranks us) uses canonical tags on every page on their site. The canonical tags reference the page they are on. For example. www.competitor.com/product has a canonical tag of www.competitor.com/product. Does anyone use this practice? It seems strange to me. Thank you, Kristen

IMG ALT tags - should they be the same or the product title?
I have about 300 products. Should I make all my IMG ALT tags with my keywords, such as sea glass jewelry, sea glass necklace, sea glass bracelets? Or, should I make them what their title is, some of which do not pertain to the keyword, such as By the Sea. Some of my products do have keywords in them, but not all. I am hesitant on changing all the titles, as almost all URLs are indexed.

Rel canonical tag back to the same page the tag is on?
Very simple, Why would a website (and I have seen tons doing this) link the rel canonical tag back to the same page the tag is on? Example: somepage.htm has a canonical tag linking to somepage.htm I thought the idea of this tag was to tell google if 2 pages are similar, this page is the original, and it's this page which should be indexed and the page with the tag on should pass all PR to the original. Maybe im wrong and someone can help me out to understand this.

If I have too many on-page links can I reduce it with nofollow tags or do the links have to be removed?
On my site I have a top nav drop down menu but once visitors go to one particularly large subsection, that menu is repeated on the left for easier viewing. As a result, I shoot over 100 links on page. Can I put nofollow or noindex tags on the left side links and reduce my "official" on-page links count or do I have to actually eliminate some of the links? Thanks, Oak
