SERPs Showing H1s Instead of Title Tags?

Hi,
I'm noticing two strange things in search results recently. Often I find that if I search for a client's company name, I see just the company name in SERPs where the title tag would normally be displayed. Examples:
'aci northwest'
'lanz heating'
As strange as that is, I'm tempted to assume this is just Google's way of "getting smarter" and showing more relevant results (though I'm not sure exactly where it's pulling from).
But it gets stranger. For the first example, 'aci northwest', when search that key phrase on Bing/Yahoo!, etc. I'm not only not seeing the title tag where it would normally be, but I'm seeing the H1 in it's place:
"When your projects demand more, demand ACI."
Any idea what's happening here?

Here is a theory... because I am not really that involve with those 2, if I remember properly Bing/Yahoo are using the same search technology, so results shouldn't be that different, and my guess is they try to do the same as Google, showing what seems more relevant, but they are not as advanced yet so the probably add more weight to the H1 in the case of your website.
As I said, its just my theory, I am not so into those 2.

Any idea about the second part - H1s showing up in place of title tag on other engines?

Product Tags
So Opencart allows the use of product tags (please note, this are NOT meta tags) which I believe are used for when customers want to search for a product using the search function. So one of my tags could be ''star wars socks'', and when a customer types this into the search it brings up every product containing the tag for socks. This is all good and well, however, these tags appear on the product page itself, right below the Manufacturer/Brand, and above the price. Will Google look kindly on this or could it be considered as keyword stuffing? Or will Google know they're for search and ignore them? I just need to know whether or not removing them entirely will be a good or bad idea.

Less Tags better for SEO?
I am currently reviewing my strategy when it comes to categories and tags on my site. Having been no-indexed for some time, and having many tags with just one entry I am thinking that this is not optimal for SEO purposes. This is what I am planning: Categories - Change these to Index, but only after adding a hundred words or so by way of introduction (see this example - https://www.besthostnews.com/news/hosting/a-small-orange-news/). With the categories I am thinking of highlighting key articles as well to improve link juice distribution to older articles that are important. Tags - About half my tags have only 1 entry, with a few more just having 2 entries. I am thinking of deleting all tags with just one entry, and trying to merge those with just two or 3 entries where it makes sense to do so. I will keep these as no-index, but I think this will mean more optimal distribution of link juice within the site. I would appreciate your thoughts \ suggestions on the best practices here.

Things to put in your page Title
Hello! I have a wordpress based blog/website and I was wondering what were the most important things to put in my title. I'm a wedding photographer. I think the location of the shoot is important and the fact that it's wedding photography, but is it important to try and put my company name (Celynnen Photography) in it too?! It's very hard to keep the titles short! Ioan

Changing the Home Page Title
The following question is for an eCommerce site: We have a home page title that has been the same for a few years. I would like to keep the keywords that already exist, but move them into different positions based on seasonality. Format will be (company name) | (keywords). Current format (company name) - (keywords). Rest of the page titles onsite are formatted (keyword)/(product name) | (company name) I think having the same keywords, but in a different order wouldn't hurt us in the SERPs. What are your thoughts?
