How to implement schema.org for different hotel rooms types

I'm working on a resort that has different type of rooms available. Does anyone know how to use schema.org to set it a hotel with different hotel room types. I looked at the hotel schema but I did not see any room types.

I'm seeing a competitor be able to make their URL/Breadcrumb stucture appear different in Google than on the site. Google shows a 3-4 category silo for the page but once clicked the page is off root. How could you do this?

Schema Tags Configuration - Ecommerce Category Pages
I'm semi confident that some schema tags are implemented correctly on our ecommerce category pages.. but I would just like to double check. Half Implemented HTML 5 Structure
Hi there, I have just notced on a website that it has a halt implemented html 5 structure. Well, when I say half implemented, it has the doctype and then one <header>section. After that all of the divs are custom ones that have been added for the CSS. Could this lack of structure have a negative effect on the site? Cheers, Edward </header>

Over the last couple of years I've repeatedly submitted (about 4 times) our site to dmoz.org, hoping to get listed but have never been successful in getting the site recognized.
