Organic searches are a roller coaster when should I get worried?

I know organic searches go up and down and there is no way to control that. When should I be worried about search results I.E. site is being de-listed or some other SEO problem

Then you have nothing to worry about as far as being delisted.
I doubt the server issue would matter, but do make sure your website loads as fast as possible. That is one factor that influences search results. But suffice to say the traffic sways up and down based on lots of factors from Google along with things like the day of the week, seasons of the year, holidays, etc. In my opinion you have nothing to worry about outside of simply steadily building your website traffic.

patrick_G we aren't engaged in any grey hat or black hat practices we are kind of learning SEO as we go and trying to figure out if a new update from google is affecting us. Also scaled down our servers to smaller servers not sure if server speed affects SEO drastically or not

If I'm reading the screen shot right, I wouldn't be worried. Seems like normal to me.
If you're not doing anything black or grey hat that you're worried Google might not like, I'm not sure why you'd be worried about getting delisted or penalized in any way.

Search visibility consistently low. No apparent cause.
I'm trying to nail down why a site would be consistently showing a search visibility of 1-2% whilst similar competitors are in 20-30s. There are no site errors reported. Sitemap, robot.txt, meta titles & descriptions, key word presence, alt attributes, load times, canonicals, etc all check out as fine. Backlinks profile is healthier than competitors'. Yet even searching for our main product the result links to an obscure blog page rather than our main site, despite the presence of identical and similar keywords on our homepage, in our title, h1 tags, web address... Site content and design seem subjectively good and at the very least matches better performing competitor site's. Does anyone know of any less visible reason as to why a site would be tanking so badly in search rankings? Have checked using other SEO tools and they all report the same as Moz.

Kinds of organic search results (Google)
Not sure if this is a new "unit" for Google organic results. Please see the attached image. When searching for "invoice software", the top quarter of the page is a ribbon of products/brands with badly formatted logos. The fact that it's so ugly, and there's nothing marking it as a paid result, leads me to think it's organic. Anyone know what this SERP unit is called; and better still: How do you get included? We rank super high in the normal organic results, but don't appear at all in this product ribbon. y71A9

Should I worry about rendering problems of my pages in google search console fetch as google?
Some elements are not properly shown when I preview our pages in search console (fetch as google), e.g.

Puzzling drop in search referrals.
Hello All, A few weeks ago I posted in the Q and A believing I had received a google penalty due to a sudden and considerable drop in referrals... http://www.seomoz.org/q/google-penalty-8 ... so I dug right to the bottom of my site and did a complete review of all my links. After clearing all the potentially problematic links, I wrote a very descriptive reconsideration request to google. 10 days or so later I received a 'no manual spam action found' response, which I guess is a good thing but now begs the question- what has gone wrong!? Over the past 4 or 5 months I've been doing some heavy work on the SEO of my site, www.madegood.org. This has all been white hat stuff (as far as I'm aware), and have been using my seomoz pro account to monitor progress. I've done lots of reading on the subject so think I'm up to scratch on most general good advice, in terms of link building and site structure. I've always tried to create very high quality content and have been building some great links from very authoritative sites including The Guardian newspaper and Sheffield University. My pro dashboard is telling me that my link analysis history is improving, despite my keyword performance declining. Is there anyone that can do a deep review of my site? I'm happy to share my analytics/webmaster tools etc info with you if that is helpful? I'm totally lost here and am becoming disheartened with all the hard work I've been putting into the SEO for my site. Thanks so much in advance, any help is gratefully received. Pay on Organic Search Results
Are there companies out there that accept payment on the results they get for organic search listings? I have a site that I want to be number 1 for two terms on Google UK and .com and I while I dont think it will take much effort I would like to find a decent SEO company or person that can do this and be paid for the result. What do people think?
