Correct use of schema for online store and physical stores

I have been getting conflicting advice on the best way to implement schema for the following scenario.
There is a central e-commerce store that is registered to it's own unique address which is "head office". There are a few physical shops each of which has their own location and address. Each shop has its own landing page within /our-stores/.
So each page on the website has the Organisation schema for the central 'organisation', something like:
Then on each physical store landing page is something like the following as well as the Organisation schema:
Is this correct? If it is should I extend LocalBusiness with store URL and sameAs for GMB listing and maybe Companies House registration?
It's also been suggested that we should use LocalBusiness for the head office of the company, then Departmentwith the typeStore. But i'm not sure on that?

The head office happens to be the e-commerce store. Then there are actual physical stores that sell the same products physically.
So we do want visibility for 'HQ' as the main 'entity'. Yes if anyone has a problem they contact the shop or HQ/e-commerce store. So with that in mind I still need clarification of the schema to use.

That "Local Business" is what they use. "Organization" does not appear in that list
Think about what you want to achieve. Utilising schema helps contact details (and many other, granular pieces of information) to jump out for brand, or entity-based queries
If you have a head office which you're working on, aren't most of the queries to HQ internal? Do you really want people calling up HQ instead of going to one of the purpose-built, consumer outlets? Obviously if you're looking to ascertain a mixture of B2B and B2C leads, what I'm saying might not quite be accurate
In most circumstances, I wouldn't want work-offices (HQ) to be more visible in Google's search results, so I would eradicate all schema. Then I'd just go with LocalBusiness schema for all the outlets

Genesis WP Theme H1 Tag not properly Used?
I am in the process of redesigning my website, and I have been working on the Genesis framework a lot lately, so I used the Genesis framework to make my new site. The URL is http://protechig.com As I look at the H1 on the page (homepage only, every other page has solid h1s from an SEO perspective.) The first thing that I see is that the home page H1 is a links (to protech's home page). The second thing that I see is the the title text is replaced with an image (my logo) and there is a text-indent:-99999; and overflow:hiden; I just want to know from an SEO perspective if this is okay, and, if it isn't, what I could/should to to rectify it. Using a non-visible H1
I have a developer that wants to use style="text-indent:-9999px" to make the H1 non-visible to the user. Being the conservative person I am, I've never tried this before and worry that Search Engines may think this is a form of cloaking. Am I worrying about nothing? And apologies if it's already been covered here. I couldn't find it. Thanks in advance!!!!

Using Sitemap Generator - Good/Bad?
Hi all I recently purchased the full licence of XML Sitemap Generator (http://www.xml-sitemaps.com/standalone-google-sitemap-generator.html) but have yet used it. The idea behind this is that I can deploy the package on each large e-commerce website I build and the sitemap will be generated as often as I set it be and the search engines will also be pinged automatically to inform them of the update. No more manual XML sitemap creation for me! Now it sounds great but I do not know enough about pinging search engines with XML sitemap updates on a regular basis and if this is a good or bad thing? Can it have any detrimental effect when the sitemap is changing (potentially) every day with new URLs for products being added to the site? Any thoughts or optinions would be greatly appreciated. Does google use the wayback machine to determine the age of a site?
I have a site that I had removed from the wayback machine because I didn't want old versions to show. However I noticed that in many seo tools the site now always shows a domain age of zero instead of 6 years ago when I registered it. My question is what do the actual search engines use to determine age when they factor it into the ranking algorithm? By having it removed from the wayback machine, does that make the search engines think the site is brand new? Thanks

Should we use Google's crawl delay setting?
We’ve been noticing a huge uptick in Google’s spidering lately, and along with it a notable worsening of render times. Yesterday, for example, Google spidered our site at a rate of 30:1 (google spider vs. organic traffic.) So in other words, for every organic page request, Google hits the site 30 times. Our render times have lengthened to an avg. of 2 seconds (and up to 2.5 seconds). Before this renewed interest Google has taken in us we were seeing closer to one second average render times, and often half of that. A year ago, the ratio of Spider to Organic was between 6:1 and 10:1. Is requesting a crawl-delay from Googlebot a viable option? Our goal would be only to reduce Googlebot traffic, and hopefully improve render times and organic traffic. Thanks, Trisha
