So just to clarify - the linking websites are legitimate however these 'legitimate' sites have questionable link profiles?
If this is the case i would keep these links, why disavow a legitimate link from a legitimate website?
i would also argue that Domain authority and page authority are only indicators, if the link is relevant then these metrics shouldn't really matter

RE: DIsavow links even without a penalty?
I agree with EGOL, why wait to be penalised? Just disavow them and move on. Any drop in rankings should be able to be recovered by securing a few solid authoritative links

If the links are low quality disavow them, better to be proactive rather than wait for a penalty then having to go through the process anyway.

I wouldn't be too concerned Google themselves recently said in their webmaster guidelines
"Limit the number of links on a page to a reasonable number (a few thousand at most)."
Think of it more from a UX perspective, if its good for the user keep it!

Have you looked at the competitors websites who are ranking above you for the term "oak beams"?
This often a great starting point to see what you need to improve within your own website. I agree with Logan that more unique content focused around Oak beams wouldnt hurt.

This doesn't sound like buying links to me but rather giving a donation and receiving a link as a by product as a charitable deed. Would be surprised if this didn't do you more good than harm as stated above.

Content should be as long or short as it needs to be. Don't limit yourself by trying to hit a specific number of words.

RE: Hello, our domain authority dropped significantly overnight from 37 to 29\. We have been building good links from high DA pages and producing quality, regular content.
Domain Authority is always worth measuring against competitors rather than just as a metric on its own. Do you know what happened to your competitors DA overnight?

Your alt tag should aim to describe what the image is, be careful of using them purely for SEO purposes. Keyword stuffing should always be avoided if possible. Just keep them short and natural to what the image is, this will help you avoid any penalties from Google.

Yeah these tactics might have worked in the past but you are essentially asking Google for a penalty by doing them now. Remember links should always be natural which is the exact opposite of what you have talked about.

RE: Setting up a separate site for link building
This would be a no no for me.
Create the content within your domain and try to gain links to it, this will help improve your SEO efforts on the website.
Depending on your CMS you could create a section on your website entitled "Foundation" have the content in here and have it branded slightly differently from your main site, this may encourage others to link to you but you would still have the benefits of the links pointing to your domain.
Also have a search on Google for the terms "link building" and "boring" this will give you some great guides for building links within not so exciting industries!

For an e-commerce website I would be setting up a goal conversion on your checkout success page. Allowing you to easily monitor your sales and whereabouts they are coming from, also what products are selling best.
For content site it could be performing a certain action for example downloading a pdf or document, staying on a page for a specific length of time etc. Its entirely down to what you want to monitor and what you consider a 'goal on your site'
Page load time should be no more than 7 seconds (roughly). It will vary across browsers and devices.
Bounce rates vary between industry, i would be worried about anything above 60%

RE: Link building strategy
One of the hardest things about SEO is having the patience to wait for results! Keep building your high quality links and you should see some results soon.
You may want to revise your page title tag as well, you mention candles in it 3 times, i would mention candles twice max although im sure some would argue with me, it just looks a little spammy.
As another suggestion you could also have some introductory text on the page describing the candles, what makes them unique? why should people buy your candles and not other candles? This may help with ranking but will also add value for users.
