Over 20 Categories, No Keyword Strategy, Can someone help?

Hello Friends,
I have recently built a big site with nearly 300 pages (to begin with) and there are around 20 categories on the website. I want to get 3-4 keywords ranked for each category but I don't know how and where to begin. My site revolves around wedding industry but does not have a "Main Keyword" - not yet at least. A couple of "Main Keywords" (these keywords actually describe my website) that I thought of have ZERO traffic but I have few good keywords for each category.
Can someone please suggest how do I begin with?

Keyword Ranking Research Question
Hi Mozzers,This is probably a nooby question, but I was wondering how you guys end up deciding if a Keyword is too hard to rank for? Also vice versa, when do you decide that a keyword is too low volume to rank for so you try to rank for a harder keyword? Eg.

What does it mean when two keywords in Google's Keyword Research Tool have exactly the same amount of searches?
The two keywords are [publicity] and [product placement] (both in exact search - not broad) and have 22,200 searches each. Is it purely coincidental or are the two keywords kind of related in Google's eyes and that's why we're seeing the same amount of searches for each?

Help Selecting Home, Category, Product Page Keywords
Hi folks, I read the beginners guide (a couple times, haha) but I have some questions on specific keyword selection for pages on our site. We make natural skin care products. Goat milk soap is our flag ship product and we make about 15 different varieties. For the moisturizers, we have normally at most two different kids (two body lotions, two body butters, one facial moisturizer, etc). My questions are: What keywords should I select to optimize the home page for? Should these be broad keywords like "natural skin care"? We've never tried to rank for things like this before because they are highly competitive. Or should they be specific keywords? Specific keywords would compete with our own product pages I think, which is not good, right? What page should I select to optimize for the term "goat milk soap"? Since we make many varieties, I'm inclined to optimize the "category" page for the term "goat milk soap", and optimize the individual product pages for variations on it (e.g. "lavender goat milk soap"). Does that make sense? This site is a brand new site for us and we've done practically zero SEO work on it so far. I'm just kinda getting into SEO. Does anyone know of any good keyword tools that will help me find and then maintain a list of keywords? I currently use Google adwords and now the keyword tool from Moz but I am looking for something that will help me find and generate keywords not just get statistics about them. Thank you.

What's the best keyword tool for discovering regional/metropolitan area keywords?
Generally I use the Google Keyword Tool for my keyword research, but given the fact that the data is either country specific or global, I was wondering what others use for regional/dma-specific keyword discovery. Regional traffic is very important to my site, so I'm hoping to find a tool that I can use to find keywords germane to my audience.

Keyword question
In my keywords should they include the city name or not? Example..... plastic surgery or plastic surgery Orlando I know the search engine knows what city i am in, if i search for plastic surgery and i live in Orlando, does it pull up world wide plastic surgery links first or local plastic surgery clinics? Keyword Variations?
Hi, can anybody tell me if it is useful to optimize the following keyword in all 3 Versions?

As I know google separates the 2 words as if using a hyphen - so it would be the same as if just using a space between the words.
But if you search for the different Versions in google there are different SERPS for every of this versions? Not many users will search using a hyphen between the words I guess - butt I saw some few keywords tipped in with hyphen in my google analytics report.
