Our clients Magento 2 site has lots of obsolete categories. Advice on SEO best practice for setting server level redirects so I can delete them?

Our client's Magento website has been running for at least a decade, so has a lot of old legacy categories for Brands they no longer carry.
We're looking to trim down the amount of unnecessary URL Redirects in Magento, so my question is:
Is there a way that is SEO efficient to setup permanent redirects at a server level (nginx) that Google will crawl to allow us at some point to delete the categories and Magento URL Redirects?
If this is a good practice can you at some point then delete the server redirects as google has marked them as permanent?

Here are the steps:

Open your nginx configuration file.

Add the following code to the file:
location /old-category {
redirect 301 /new-category;
}
Note:- Replace /old-category with the old URL of the category and /new-category with the new URL of the category. -
Save the file and restart your nginx server.
Once you have done this, Google will crawl the new URLs and update its index accordingly. You can then delete the old categories and Magento URL redirects.

Over Optimised Magento Pages
We are working on a clients Magento site and we've added new copy which has a decent keyword density which is in line with best practice. When we run it through Moz we are getting a Key Word Stuffing alert saying the page has 27 keywords, where we can only see about 11. This is the page https://www.greatbeanbags.com/bean-bag-cushions The client is pushing back saying the page must have already been optimised before as our new copy has triggered the stuffing alert. Strange URL redirecting to my new site
Hi all, I recently relaunched a site on a brand new URL - www.boardwarehouse.co.uk. I've spent the last couple of weeks building some backlinks as well as developing a basic content strategy. We've started ranking for a few of our less competitive keywords which is great, however there's a strange site which either redirects or is mirroring our content. I'm at a complete loss as to what's causing this to happen and what i can do to stop it. On the attachment - my content is top and second. The fourth result is the offending site. Site redesign. Possible SEO problems?
Hi! Our website has enjoyed good rankings for lots of our keywords for the past 9years. Over the years the site became heavy, so we want to change the design radically. Content, filenames, titles, urls etc. will all remain identical just the change of a template. The new one is minimalistic and responsive design. What can I do with 8000+ 302 temporary redirects?
Hi I'm working on a clients site that has an odd structure with 8000+ 302 temporary redirects. They are related to actions on the site (they have to be there and work this way for the site to function) but they also have a stupid number of perameters. Would it be ok to block them all in the robots.txt file? Would that make any difference?

Magento- 1675 302 Redirects - How to Fix?
Hi Folks, I would appreciate some help on this. My ecommerce website is built on magento and we currently have 1675 302 Redirects on it as pointed out by the SEOMOZ crawler. Has anyone any idea on how to fix this or ave you being on the same boat as me. Im pretty sure this is why it coming up that I have a lot of dup content on the website also. What is the best top menu linking structure (for SEO) for my site: A or B?
I don't know if these two scenarios are any different as far as SEO is concerned, but I wanted to ask to get an opinion. On my website: http://www.rainchainsdirect.com you can see there is a top menu with "About" "Info" "Questions" etc. Some of these links lead to further pages that are essentially a indeces for multiple further links. My question is: in terms of SEO, is it better to A) have all links (that are now on the pages that the menu links lead to) displayed in a drop down menu directly from the top menu (and bypassing an intermediate page) or B) to have it as it is now where you have to click to an intermediate page (like "rain chain info") to get access to the links (and not have such a large drop down menu) Is there a difference in terms of SEO? In terms of useability it almost seems like a toss up between the two, so if there were better SEO value to one of the other, then I would choose that one. By the way, I know that the way it is structured now is strange, where there is only one drop down that leads to the same page as the top menu item, but that will be fixed, fyi. Thanks!
