How do I determine international search volume for a search term, beyond google?

I am trying to determine which countries I should be entering into next with my product based on search volume and competition. The issue is that not every country has google as their primary engine, ie. China.
How would I go about figuring out volume / competition globally across all engines?

Google Adword Keyword Planner
Previously I always utilsed the Google Adword Keyword Tool to provide traffic estimations in order to assist with my keyword research. I have recently revised these levels of traffic using the new Keyword Planner. Local Traffic results are approximately have fallen approximately 85%, I have anaylsed this over approximately 50 results. I am aware that the new Keyword Planner does not have a local traffic column anymore so I have utilised the location filter. I have the same problem in all my campaigns, in two different countries, please can someone advise why this is and how I can collect accurate keyword data. Kind regards

Ranks moving up & Down for a certain keyword search
Hi, We had lost rankings for certain keywords completely from google's index about 5 months ago. Recently the rank for the keyword reappeared on google. But it keeps moving up and down. One day on 26th position, next day it is on 45th position, then it comes back to 30th position. This has been going on for over a week now. Does a UK version of Hot Searches exist?
Hi, Is there a UK version of US Google Hot Searches? From my search, it seems like there used to be Hot Topic but it no longer exists. What can I use to find trending topics in the UK? If anyone has tools that work in RU, AU, DE or SW that would also be greatly appreciated! Thanks!
